Five Minute Friday-Relief

It is not what some would call a pretty face. It is red, sweaty, a bit wrinkled, and (to be honest) a bit “bland”. But, it is also the face of relief, the face of accomplishment, and the face of pride.

It is relief because my Saturday morning treadmill time is finished. It is accomplishment because I did 2 miles in 35 minutes. It is pride because I am so proud that I am sticking with it, working out, and doing my part to strengthen my body and deal with my health issues.

God provides the best relief- even greater than the relief that I felt as I stepped off that treadmill. One of the very first verses I memorized as a young child was John 3:16-

For God so loved the world that he gave his only begotten son, that whosoever believes in him shall not perish, but have everlasting life. 

By sending his son, Jesus into the world he provided us all with relief: relief from our sin, relief from our worries, relief from pain, relief from a life in a burning pit of fire. All WE need to do is BELIEVE! Thank you God for that relief.

2 New “Make-Its”

With yesterday being a holiday I got a bit busy and did not get to post my usual Make-It Monday. Since I am a day late, I thought I would share 2!

My first share is my new Scrabble game.

I have always loved word games (I think it has something to do with all of those years that I spent teaching reading, English, and writing.) Anyway, while going through Pinterest one day I saw a GREAT wall version of Scrabble. Unfortunately when I investigated a bit further, I found that it was WAY above my budget.

I did, however, find THIS magnetic version on Amazon. I really liked the fact that it had hooks to hang the player’s pieces from and included a message board on the side where we could keep score. I ordered it and waited patiently for its delivery.

When the game arrived I really liked everything about it except the fact that it did not really fit in with our “farmhouse” decor. A quick trip to Hobby Lobby fixed that! I purchased a wooden pallet sign on which I could mount the game board. I am SO happy with the end result!

The game hangs in the hallway just outside Hubby’s office. Each day we make our move and update our scores. Some days we can even fit in 2 moves each!

The second “Make It” was some stuffed chicken that I made tonight for supper. I found the recipe online at the “I Wash, You Dry” blog.

I changed one thing when I made it: I used a steam bag of broccoli florets from the freezer section rather than fresh broccoli.

It was SO YUMMY!!!!!!!! I actually had enough of the filling to stuff 4 chicken breasts. These things were huge, so Hubby and I split one for supper tonight. I split a second one and prepared two plates for us each to have tomorrow for lunch, and I have the other two tucked away to send to my daughter and son-in-law for supper tomorrow.

I definitely recommend this recipe! You will not regret it!

Sacrifice

In an effort to continue stretching myself I have decided to join in on a weekly blog post group. Each week they will provide a word. All I have to do is write for 5 minutes with that word as my topic or inspiration.

This week’s word is SACRIFICE.

As a mother I know a lot about sacrifice. We sacrifice our time, our money, and our plans for our children. There are many times when I was at an academic match, a practice, or a run when I would much rather have been doing something else.

I learned about motherly sacrifice from one of the best! My mom rarely bought new clothes for herself. Instead, she made sure that we had food on the table, shoes on our feet, and clothes on our backs. She also made sure that we were able to get to whatever event at school or church we really needed to attend.

My daughter sometimes reminds me that it is ok to do something for ME– take some time to do what I want to do or splurge a bit on something that I really WANT rather than something I just plain NEED.

Yet, my sacrifices are so minuscule compared to those of God. I cannot imagine the sacrifice he made in sending his son to die for my sins! I cannot imagine standing by and watching as one of my children suffered the cruelties that Jesus did on the cross. THAT was the ultimate sacrifice!

This Week’s Stretch

I am off and running with my plan to stretch myself and do things that I do not normally feel comfortable doing.

Stretch 1- Go to the gym

Planet Fitness opened up just a few miles from our home and when I saw their $10 a month special on television I thought I would give it a try. I needed exercise and this might be the best way to get it.

My daughter had told me that one of her hubby’s relatives also had a membership so I contacted her to see if she had any plans to go. She had actually packed a bag and planned to go on her lunch hour. I told her that I would join her, though I was still a bit nervous about it. After all, I had NEVER had a gym membership.

I could just picture myself being the old one in the room and having everyone look at me with a “Why is SHE here?” kind of look. Boy, was I wrong!

There were a number of older people, both men and women. My new friend showed me the ropes of how to use the stretching equipment and the treadmill. For the next 30 minutes I walked on the treadmill, speeding it up and even raising the incline. At the end of 30 minutes I felt GOOD and not even very tired, but I figured that I did not want to overdo it, so I headed home.

As I looked at myself in the mirror I saw THIS face-

My face and other visible skin was glistening with beads of sweat. My cheeks were rosy and healthy looking. My heart rate was still a bit high due to the exercise, but I felt GREAT! I had actually accomplished something!

Perhaps I need to take a lesson from the mural on the locker room doors and stop judging myself!

Stretch 2- Try new foods

I have recently discovered the joy of shopping at Aldi. I am so sorry if you do not have one near you! This store has opened my eyes to a wide variety of food options, many of which I have NEVER tried before.

This week I decided to pull out my Instant Pot and try a Spicy Quinoa and Chicken Sausage.

The ingredients are as shown below:

2 packages of Never Any “Tomato & Basil Chicken Sausage”

1 box of Earthly Grains “Roasted Red Pepper and Basil Quinoa Blend”

2 tablespoons olive oil

1 large onion, chopped

1 1/2 tablespoon minced garlic

1 large bell pepper, cored and diced

1 jalapeno pepper, cored, seeds removed, and diced

15 ounce can of diced tomatoes, drained

1 cup low sodium chicken stock

15 ounce can of black beans, drained and rinsed

1 tablespoon lime juice

Instructions:

I started by slicing the sausages into small pieces about an inch thick. I set my Instant Pot on saute and added the olive oil. I threw in the sausage and let it cook for a few minutes, stirring it and turning the sausage often. I removed the sausage to a bowl and set it aside.

Now I put the garlic and onions in the pot and allowed them to cook for a few minutes, stirring it often. Once the ingredients were a bit soft I opened up the box of quinoa and put it in the instant pot, setting aside the seasoning packet for a bit. I put the peppers, tomatoes, and chicken stock in the pot as well. Then I added the contents of the seasoning packet and stirred it all together.

I covered the instant pot and set it on pressure for 10 minutes. When the time was up I used a quick release and opened the pot. I put the beans, chicken sausage, and lime juice in the pot and mixed it all together.

The end result was a big hit with my hubby!

As for me, I liked it even better the second day! I was also proud of myself for trying two new foods: quinoa and chicken sausage.

A New Year- A New Word

I am now almost halfway through January and well into my journey with my new word.

2019 was my year to THRIVE and I did quite well with that word until life threw me a bronchitis curve midway through. After that, it just seemed that I could not get back on the Thrive bandwagon.

I am not sure if it was my “unfinished business” with my old word or the fact that I have not really settled into my new life that made it difficult to settle on a word for 2020. Whatever the case, I found myself going back and forth between several words for weeks before I finally settled on

STRETCH

I am not sure that some people in my immediate family completely understood my word choice. They wondered what I really wanted to do. Well…..

Maybe THIS will make it a bit clearer:

stretch your life

I want to reach out and stretch myself into my new community. I want to try doing things that I normally would not do (believe it or not I have actually signed up for a gym membership), try foods that I have always been uncertain about, go out on my own (something I do not TOTALLY feel comfortable with at times), meet new people, and begin to develop new relationships.

I also want to deepen my relationship with God and the Bible. To accomplish this I have laid out several goals for myself:

  1. Read my Bible through this year. (I did that once a couple of years ago and it was a TRUE blessing!)
  2. Journal daily (I have purchased a new planner to use for this- more about that in another blog entry)0221DF20-DB5D-47D9-A6FA-90A8570315A5
  3. Integrate devotionals into my reading for the year (This one got a jump start when my sweet son gifted me with several devotional books at Christmas.)
  4. Attend church regularly (I have already located what will probably become my “home” church here in London thanks to my daughter and son-in-law. They had begun attending a local church and I have been going with them. I feel very welcome there and I feel that God is leading me to become more involved there.

I am settling into a morning routine. I get up and brush my teeth then head into the kitchen to prepare breakfast and a sack lunch for my sweet Hubby. I take my medicine and sit and chat with him until he leaves for work around 7. Then I head into “my” room. I have set it up as a craft space with all of my stamps, inks, and other supplies. One of the key things is my little journaling space right in front of the window.

I have all of my colored pencils and markers arranged so that I can find them easily, a few of my favorite inks, some stickers, my washi tape collection, and this stack of books:

I have included my first devotional and 3 different translations of the Bible: an NIV, a KJV, and a CSB study bible. I like to read key passages in all three translations to help me get a better understanding of God’s words. (Yet another way, I am stretching myself.)

This is MY space and the time I spend there is time where I can truly feel God’s presence. I feel certain that if I continue this routine I will discover new things about God’s word, God’s will for me, and new things about myself. THAT is my goal with STRETCHING!

Instant Pot Crack Chicken Soup

Recently a recipe came across my Facebook page for “Crack Chicken Noodle Soup”. It looked really good, but I wanted to tweak it a bit to make it more ‘my own’. For today’s Make It Monday, I decided to share my end result.

Here is what I ended up with as the recipe:

Ingredients

4 cups shredded rotisserie chicken (I bought mine at Walmart. One chicken was enough to use in this recipe and hubby had some pieces left over for a meal.)

1 can condensed cream of chicken soup

1 cup regular almond milk

8 cups low-sodium chicken soup

1 bag of frozen mixed vegetables

1 packet Ranch dressing mix

1 cup bacon bits (I got mine from Aldi)

1 1/2 cups shredded mild cheddar cheese

1/2 cup cream cheese, softened

Angel Hair spaghetti- uncooked (I just eyeballed this. The original recipe called for 8 ounces. I probably put in about 6. I felt there was a bit too much noodle in the final result, so I might cut back a bit next time.)

Instructions

I started by using two forks to shred the rotisserie chicken. I did not use the skin, just the meat. I put all of the ingredients into my Instant Pot, breaking the spaghetti in half as I threw it in. I set the pot on manual for about 8 minutes with pressure. I did a quick release at the end of the cycle and checked it to determine if the pasta was done enough to suit our taste. I ended up cooking mine under pressure for a bit more, but you can use your judgement.

Here is what the resulting soup looked like:

My hubby, daughter, and son-in-law all raved about this! It was thick and creamy, filling, and had a wonderful taste due to the ranch dressing mix. I will definitely be fixing this one again when we get a big winter snow on the ground. It is PERFECT for days like that!
